Pudina/Mint Pulao

This year my pudina(mint) plant is flourishing like crazy. Its every where and is trying to take over my whole vegetable garden. So I have been trying to make more and more recipes with it. Mint is really good for you but the thing with it is, it over powers very other taste very easily, so u cannot use it too much. 
So you might see more than a few recipes using mint soon.
Here is my first one.
Ingredients 
For the pudina juice

  1. Pudina(Mint)leaves  - 1 cup loosely packed
  2. Coriander leaves- Half a bunch
  3. Grated coconut-Half a cup      
  4. Cinnamon-1 big
  5. Cloves- 4-5
  6. Bay leaf-1
  7. Green chillies- 2  or (as required)
  8. Ginger: 1/2 a inch
  9. Garlic – 2 cloves

For Pulao:

  1. Basmati Rice- 1 cup
  2. Onions – 1 large thinly sliced
  3. Carrot -1 big cubed
  4. Fresh peas- Half a cup
  5. Beans- 10 -12 in number cut into 1/2 inch 
  6. Ghee-1 tbsp
  7. Oil- 1 tbsp
  8. Jeera-1 tsp
  9. Water- one cup (Water has to be adjusted with the amount of pundina juice obtained)
  10. Salt to taste

Procedure:
For the pudina juice
Grind together the required ingredients[mentioned above,for the juice with enough  water.
Strain it to get a clear green pudina juice.
Keep it aside.
For the Pulao
In a pressure pan add the ghee and oil.
Add jeera  and let it crackle.
Add the sliced onions and sauté  till golden brown.
Add  the rest of the ingredients and sauté for a few seconds.
Now add the washed basmati rice.
Stir well and add water (water has to be adjusted with the pudina water obtained)  
I used 1 cup of pudina juice and one cup of water.Add salt to taste.
Close the lid.
After 1 whistle shut off the heat and let the pressure release automatically.
Once done carefully mix well so that you don't up with mashed up rice.

Serve it hot with raita or something really spicy and enjoy.
