Chilli Gobi

Now that we have moved, Tanmaya has to travel a lot for work. He no more has the luxury of coming home for lunch. So I have to pack his lunch. Never thought I would do this, not at-least till I have kids and they start school. But there is always a price for nice things. Now that I have to pack his lunch, I have to prepare new items everyday as he is like a kid who wait for the lunch bell to go off so that he can eat :) So while doing grocery I asked him to pick some capsicum and panner, so that I can prepare some chili paneer for him, but he forgot paneer and for Indian items I have to drive 36 miles back to Santa Clara. So I decided to make chilli gobi instead. Here is my recipe, Ingredients:

Tater Tots

Tater Tots are a commercial form of hash browns, a side dish made from deep-fried, grated potatoes. They are widely recognized by their crispness, cylindrical shape and small size. Tater is a slang used for potatoes. These are great as a side dish. You can find these in the frozen isle of any supermarket.  But I wanted to try the homemade version of this yummy side. Ingredients:
Potato: 2 largeCorn Starch : 2 tbspSalt: as per tasteGarlic: 2 cloves gratedBlack Pepper: 1 tbsp Freshly GroundOil: for deep frying
Procedure: Parboil and peel the potatoes and cool them down. Once cooled grate the potatoes.  Mix the salt, pepper, grated garlic and corn starch with the grated potatoes.
You can replace the grated garlic with garlic powder if you prefer. Heat oil in a frying pan. Make cylindrical tots from the mix and deep fry the tots, until slightly golden brown. Spanish Omelette

The Spanish omelette is a typically Spanish dish consisting of a thick egg omelette made with potatoes and fried in olive oil. There are so many variations even in one specific region but the most common is the one made with eggs, potatoes and onion.
Ingredients:

Eggs: 5 wholeGarlic: 2-3 cloves mincedOnion: 1 large choppedPotato: 1 large cubedMilk: 1/2 cupSalt: as per tastePepper: as per tasteCheese:Mixed shredded 1/2 cupOlive Oil: 2 tbsp
Procedure:
Preheat the oven to 350F.
In a skillet heat oil and minced garlic and onion to it.

Cook onions and garlic  on medium heat 5 min., stirring frequently. 
Add potatoes, cook for 5 min., stirring frequently.
Remove from heat. 
Coat a oven safe baking dish with little non-stick spray.
Spread potato mixture to evenly cover bottom of skillet.
Whisk eggs and milk until blended, pour over the potato and onions.
Top with cheese.
Bake 20 min or until center is set.


Slice and enjoy with some toast and coffee or juice and have a happy morning :)

Panchmel Dal

I am finally almost settled in my new home and have some time to start cooking and blogging again.
Panchemel dal, as the name suggest its a combination of 5 different dals. Its a very popular recipe from western India.
I was watching Jodha Akbar the other day and in the scene where Jodha prepares food for the feats, she mentions the wide spread menu with all the yummy mouth watering dishes and hear them saying "panchemel sabji" and it immediately hit me to make some, but as we had just moved in, had not enough veggies, instead tried the panchemel dal. So here is my take on it.
Ingredients:

Moong dal:1/4 cup
Tur dal:1/4 cup
Urad dal:1/4 cup
Channa dal:1/4 cup
Masoor dal:1/4 cup
Turmeric powder:1/2 tsp
Cooking oil: 1tsp
Ginger:1 tsp chopped
water: 3 1/2 cups 

For seasoning:
oil: 1tbsp
cumin seeds: 1 tsp
cloves: 2
cinnamon sticks: 1/2 inch
bay leaves:2
big cardamom: 2
green chillies: 2 chopped
curry leaves: 6-8
asafoetida: 1/4 tsp
red chilli powder: 1 tsp
fresh chopped coriander leaves: 2 …

Flour less chocolate cake

I know it's been some time since my last post.
I have been little busy with our move into our new home. It's been a great experience and am thrilled to start cooking in my new beautiful stainless steel gas cook top and other beautiful appliances.
I cannot wait to take some gorgeous pics and share with you guys.
Till then here is a recipe for flour less chocolate cake.

Ingredients:
bittersweet chocolate: 2 1/4 cups coarsely choppedunsalted butter, cut into six pieces:3/4 cup more for the panlarge eggs: 5granulated sugar: 1  cuppure vanilla extract: 1 1/2  teaspoonssalt: 1/4  teaspoonunsweetened cocoa powder:1/4 cup,  more for the pan Procedure  Position a rack in the middle of the oven and heat the oven to 300 degrees F. 
Lightly butter the bottom of a 9x2-inch round cake pan and line it with a round of parchment. 
Lightly butter the parchment and the sides of the pan and dust with cocoa powder.
