Chicken Tawa Kabab

Recently Tanmaya is one health kick and the only thing he eats through out the week is green salad and grilled chicken breast. So every other weekend he would get huge pack of boneless chicken from costco and I am left wondering how to make something tasty out of it that doesn't need a lot of oil , time and tastes good.So I decided to make kebabs.
Ingredients: Boneless chicken: 3 thigh piecesGinger: 1 inchGarlic: 8 -10 clovesRed chilli: 4 wholeEgg: 1 wholeCoriander Seeds: 1 tspCumin Seeds: 1 tspTurmeric: 1 tspGreen chillies: 2 finely choppedGaram masala: 1/2 tspOnion: 1 small finely choppedChat Masala: 1 tspCorn Flour: 2 tspOil: 2 tspProcedures: Make a fine paste of ginger, garlic, coriander seeds, cumin seeds and red chilli. To this paste add egg and chicken and make a fine paste. Egg Bhurji Curry

As a kid this used to be one of my favorite curries that my mom would make for breakfast with roti or parathas. Its easy, quick and on top of all yummy!!!


Ingredients:

Egg: 4 wholeOnion: 1 medium finely choppedGreen Chilli: 4 finely chopped (remove the seeds if you don't want it to be too spicy)Tomato: 1 medium finely choppedGreen Peas: 1/2 cupRed Chilli Powder: 1 tspTurmeric Powder: 1/2 tspSalt: as per tasteMutton/chicken curry masala: 1 tspOil: 2 tsp
Procedure:
In a pan heat 1 tsp of oil and 1/2 of the chopped green chilli and onion with a pinch of salt.
Fry till the onion turns transparent.
In the mean while beat the eggs with 1/4 tsp of red chilli powder and 1/2 tsp salt.
Add the beaten eggs to the pan and make scrambled eggs.
Cook till the eggs are cooked through and the eggs turn slightly brown.
Remove from heat and keep aside.
Mix rest of the chopped green chilli , onion and chopped tomato together.

Gulgula

Its a popular snack made in Orissa with wheat flour and enjoyed with ghughuni and dalma. This is one of my brother's favorite evening snack.


Ingredients:

Wheat flour: 1 cupSugar: 1 cup Oil: 2 tspCurd: 4 tspFennel Seed: 1 tspSalt: 1 pinchWater:  1/2 cupOil: for deep frying
Procedure:


Mix all the ingredients together except the water. 
Add water little at a time till we get a thick batter.
Heat oil till drop of the batter rises immediately without getting brown. 
Now fry the gulgula batter 1 tsp at a time till it turns brown on all sides.
Serve it hot with ghughuni or dalma and enjoy.

Mudi Ghanta

Its an authentic oriya dish that uses fish head, tail and channa dal.
I know the name does not make much sense to non-oriya people actually it does not make much sense to me either  as it really does not use any mudi :) Its generally cooked in wedding receptions in villages and its really important to people that it is a part of the feast.
Ingredients :
Fish head: 1 ( I used tilapia fish, back home its generally rohi )Fish tail: 1Channa dal: 1 cupTomato: 2 medium finely choppedPotato: 1 medium cut in cubesGrated ginger: 1 tspGinger garlic paste: 1 tbsOnion: 1 mediumCinnamon stick: 1 inch longCardamon: 2Bay leaf: 2Cumin seeds: 1 tspMustard seeds: 1/4 tspCoriander seeds: 1 1/2 tsp Red chilli: 4 wholeTurmeric: 2 tspOil: 4 tspSalt : as per taste
Procedure:

Wash and soak the channa dal for 2-3 hours. 
Marinate the fish with salt and half of the turmeric for about 5 minutes.

Masala Omelet

As I mentioned in my previous blog there are so many different ways to make omelet here is one more version that has a very Indian touch to omelet. I learned it when I was staying with my friends during my early job days.


Ingredients:

Whole Egg: 2Onion: 1 small finely choppedTomato: 1 small finely choppedGreen Chili: 2 finely choppedSalt: as per tasteRed chili powder: as per tasteMutton/Chicken Masala Powder: 1/2 tspCoriander Leaves : finely chopped 1/2 tspOil: 2 tsp


Procedure:
In a pan heat 1 tsp of oil add green chili, onion and tomato with salt to taste.
Cover and cook  till the tomatoes are mushy.
Add the red chili powder, Mutton/Chicken Masala Powder and coriander leaves and cook for 2 mins stirring occasionally.
Remove from heat and let it cool down.
Break the eggs add the cooled masala to it and beat it.
In a pan heat the rest of the oil and pour the beaten egg and masala mix.

Lababdar Machi

Its a deliciously flavored fish curry from South India. It has a very creamy sauce and goes great with rice and naan. 


Ingredients:
Fish: 500gms Onion: 2 large (Paste)Ginger Paste: 1 tspGarlic paste: 2 tspTomato Puree: 2 tspCurd: beaten 2 tspCurry Leaves: 3-4Mustard Seed: 1 tspRed Chilli: 2 wholeSalt : as per tasteBlack Pepper Powder: As per taste:Coriander Powder: 1 tspCumin Powder: 1 tspGreen Chilli: 2 wholeTurmeric Powder: 1 tspOil: 1 tspProcedure:
In a  pan heat oil.
Add mustard seeds, red chillies, curry leaves. 
As the mustard seeds stop spluttering add paste of onion, ginger and garlic and tomato puree
Add salt and pepper and cook for 5-7 mins stirring in between, till oil starts oozing out and the raw smell is gone.
Add curd, coriander powder, cumin powder and turmeric powder and cook for another 4-5 mins. 
As the oil starts oozing out of the masala add the fish , green chillies , cover and cook for 5-6 mins a more.
Serve it hot with rice or naan.

Channa Masala

Channa masala is the very first dish I ever cooked apart from experimenting on omelet. My mom never believed that I can make anything other than a nice salad. But Dad would always make me prepare tea for him and every time I would manage to screw that in one way or other ... still do ;)....
So when one day with my mom's help I prepared this dish, she and my dad were assured that I can at least manage to cook something edible.


The moral is never underestimate the cooking skills of a gal who screws up a tea LOL....


Ingredients:

Tawa Pulao

When ever we have potlucks the concentration is on good food, great booze and loads of fun. If you ask the guys in the group what do you want for main course it would never be a vegetarian item and we end up making variety of non veg. But Sunita is  our one and only vegetarian groupie and every time she is the one who would prepare some thing vegetarian. So this post is dedicated to her, as she introduced me to tawa pulao and makes its real good.


I am not sure if its the actual receipt for tawa pulao or not but this is how I make it. Sunita correct me if I  am wrong :)


Ingredients:

Rice: 1 cupOnion: 1 medium thinly slicedGreen chilli: 2 slitGreen peas: 1/2 cupCarrot: 1 medium choppedButton Mushroom: 10cut into halfTomato: 1 small choppedPaneer: few cubes friedSalt: as per tasteCumin seed: 1 tspPao Bhaji Masala: 1 tspRed chilli Powder: 1tspOil: 2 tspWater: 2 cups
