Kulfi

It was just last week, when I was complaining about how come its still so cold in the middle of April. This week I am all set to set up my air conditioner and get my old 95 Camry a new AC as it is so hot while driving. HMMMM nature and its mysteries. 
So I thought whats a better way to welcome long waited summer than some old fashioned kulfis. I remember my school days when during the summer vacation I would do anything to get my mom to buy me these yummy cold treats. 
It would just after we had a hearty meal and little past 1:00 in the after noon when we would hear the jingle of his cart and me and my cousins would shout kulfi and mom would get us all kulfis and then she would sit down with hers with my aunts and would never forget to mention her favorite story about me and kulfis. The stories goes something like this : I was born in Chandigarh where my dad was posted during his air force days. Spinach Cheese Paratha

Yesterday we finished the course and cleared all the exams Yipee!!!!


I and Jo finally got time to catch up on the chat we have been planning for some time now. We went to Chat paradise on the Elcamino and enjoyed chat basket, papri chat and hara bhara paratha. I enjoyed every bit of it in a nice rainy afternoon whith a lovely friend.


That inspired me to prepare something with spinach. I didn't want to go with plain palak paratha. So I tried little different spices and cheese.


Ingredients:

Wheat Flour: 1 1/2 cupSpinach: 1/2 cup finely choppedFeta Cheese: 1/2 cupMint Leaves: 8-10Coriander leaves: handfulGreen chill: 2Onion: 1 cup finely choppedGarlic: 2 clovesLime Juice: 2 tspCumin Powder: 1tspChat Powder: 1 tspChilli Powder: 1tspCurd: 1/4 cupSalt: as per taste.Oil : for cooking paratha


Procedure:
Blend together mint leaves, coriander leaves, green chilli, garlic cloves and lime into a fine paste.

Baked Creamy Pasta

Even though I love italian food, I rarely make it a lot as Tanmaya is not into pasta so much. But I have this beautiful friend Jo who gets pasta for lunch often and makes beautifully.
I got inspired and thought why not make some nice creamy pasta and give Tanmaya a taste of Italian food  and may be he would fall in love with it.


I was right!!!!


Ingredients:

Pasta: 2 cups cookedButter:50gMushroom: 1 cup choppedOnion: 1 medium slicedFlour: 3 tspSweet Corn: 1/2 cupMilk: 2 cupsCheddar Cheese: grated 1/2 cupSalt: as per tasteFreshly Ground Black Pepper: as per tasteSpring Onion: 1/4 cup chopped
Procedure:


Cook the pasta as mentioned in the package
In a pan heat 1/4 of the butter and fry mushrooms for 2-3 mins and remove from heat.
In the same pan heat rest of the butter and add onion slices and cook for 1-2 min till soft.
Stir in the flour to it and slowly add the milk to form a smooth lump free sauce. Increase the heat and bring it to a boil storing for few minutes till it thickens.

Aloo Tiki

When you join a new class let it be yoga, dance, swimming or some technology you start being friends with people who till date were complete strangers, who lived in the same area but you never saw them. As your skills grow during the course so does your friendship. And when the course comes to an end you start realizing how much you are gonna miss those beautiful moments, even though you promise to stay in touch through email and phone but the truth is you are never again going to share a lunch together or tag along for a ride, jump on a bug when some finds it.
I am going through such a phase as this is last week of our course and I am really gonna miss those days. So the gals decided to have a potluck on Thursday as that would be the last day. I am getting Dahi Vadas, I hope it comes out good. Jo suggested if somebody can prepare Aloo Tikki. That made me realize even though I love eating Aloo tikki and Aloo Tikki Chaat I have never prepared it myself.
