Curd Rice

Curd Rice, also known as yogurt rice, is a very famous south Indian dish. Its very healthy and very easy to make. Its as simple as mixing curd and rice. But there are many variations to this basic recipe.

The way I like it is with little crunch, so this is how I roll :)

Ingredients:

  1. rice : 1 cup
  2. water: 3 cup
  3. curd : 2 cup
  4. cucumber : 2 medium sized (diced)
  5. peanuts : 1/4 cup (fried)
  6. curry leaves : 8-10
  7. mustard seeds: 1tsp
  8. green chilli : 2-3 Slit in the middle.
  9. channa dal : 1 tsp
  10. salt: to taste
  11. sugar: 1 pinch

Procedure:

Generally when we cook rice the measurement is 1 cup rice and 2 cup water, but for curd rice we need the rice to be over cooked so we would use 3 cup of water for 1 cup of rice. What we want is the rice to be mushy.
Remove the rice into a bowl and give it a nice steer, as the rice is overcooked it would mash up a little.

Now add curd and mix it. If you fill the mixture needs more curd go ahead and add it.

Add salt, sugar, diced cucumber and fried peanuts to the mixture and mix it.

In a pan add some cooking oil, as the oil heats up add mustard seeds and let it splutter. Add curry leaves, green chilli and channa dal to the oil.

As all the ingredients stop spluttering add it to the rice and curd mix and your curd rice is ready.

You can serve it with pickle but I prefer to have some vegetables with it, so I served it with cauliflower fry.
Some people like to add fruits to their curd rice. I say try whatever floats your boat :)

Its a great recipe for days when you are pure vegetarian and prefer not to eat onion and garlic.
