Egg Tadka

Eggs are a great source of protein and choline. Popular choices for egg consumption are chicken, duck, roe and caviar. The egg most often humanly consumed by far is the produce of the chicken :)

It supplies all essential amino acid for humans and provides a variety of vitamins & minerals. This is a general concept that eating egg yolk adds to your cholesterol , so does a lot of stuff. But most of dietitians say one should eat 1 egg every day which has a lot less calories compared to a bagel or a waffle.


The argument regarding what is good and bad is never ending so lets move on and see how we can have eggs with loads of protein and almost no spices.

Egg tadka is very healthy as it has a variety of Dal and very minimum use of oil and spices.

Ingredients:

  1. Green Lentils : 1/4 Cup
  2. Tuar Dal : 1/4 Cup
  3. Mung Dal : 1/4 Cup
  4. Channa Dal : 1/4 Cup
  5. Eggs : 3
  6. Onion: 1
  7. Garlic: 4 large Cloves
  8. Tomatoes: 2
  9. Green Chillie: 2-3 (depending on how spicy you want it to be)
  10. Cilli Powder : 1 tbsp
  11. Turmeric POwder : 1 tbsp
  12. Kastoori Methi : 1 tbsp
  13. Mustard Seeds : 1/4 tbsp
  14. Jeera : 1/4 tbsp
  15. Coriander Powder: 1/4 tbsp
  16. Garam Masala: 1 tbsp
  17. Coriander leaves chopped

Procedure :

Wash all the dals and soak it for some time. Boil all the dals with salt to taste in a pressure cooker. Then try to slightly mash the dals. The dal should not be very watery.

Heat oil in a pan. Add 1 teaspoon of sugar in the oil for color. Then ad
d Jeera and Mustard Seeds. When they start popping, add the chooped onions and garlic in the oil.

Stir the onions and add kasoori methi in it. Keep frying the onions. Do not overcook them. Add the chopped tomatoes and haldi powder, lal mirch powder.

Stir for some more time. When the tomato seems to have cooked well, add the beaten eggs and stir continuous like you would do in Bhurji.

Allow the egg to cook properly with oil so that the smell of the
egg is no more there.

Pour in the dal into this egg masala and mix well. Add garam masala, dhania powder and meat masala and mix properly.

Allow the dal to boil for some time. Once done.

Take it out in a bowl. Add Lemon Juice, Chopped Onion and Coriander Leaves to the dish for garnishing. Have it pipping hot with freshly made chappatis.

This is one the items that people enjoy in a cold, rainy weather with hot naan, chappati or paratha.
